Shinano no Kuni Suien
EH Shuzo in Azumino City, Nagano Prefecture traces its origins to three breweries that merged in the Showa era, inheriting a tradition of pure rice brewing that the company formally recommitted to in 1973 when it discontinued post-war alcohol-added sake. The brewery blends scientific precision with inherited intuition, using snowmelt from the Northern Alps as brewing water and growing sake rice through cooperative organic farming including aigamo (duck) cultivation. Its flagship Shinano no Kuni Suien range expresses the brewery's description of its house style as rich and rounded, with the clarity of Azumino's sky woven through every glass.
