Sakaya Hachibei

Named after Gensaka Shuzo's founding patriarch, Sakaya Hachibei has been brewed since 1805 in the Odai area of Mie Prefecture, where the brewery sits near the Miyagawa river within a UNESCO Biosphere Reserve. The guiding concept is captured in the phrase a night's comfort over a glass of surprise, prioritizing sake that can be drunk for hours without fatigue over anything dramatically aromatic. Traditional yamahai fermentation is used in several expressions each year, producing a structured, dry character with persistent umami.
