Sakaya Hachibei Yamahai Junmai Murokanamagenshu Omachi uses Omachi, Japan's oldest sake rice, in a yamahai-fermented unfiltered raw junmai from Motosaka Shuzo in Odai, Mie. The combination of Omachi's rich, earthy umami and the yamahai method's lactic depth produces an intensely layered, raw sake shaped by Mie's mountain terroir.
