Nogomi is produced by Baba Brewery (Baba Shuzoujyou), a brewery in Kashima, Saga Prefecture, with roots dating to 1795, which began selling this refined brand when the eighth-generation owner Daiichiro Baba took the helm and initiated local cultivation of Yamada Nishiki alongside use of subsoil water from the Taradake mountain range. Small-scale production remains a defining commitment, and the sake is designed to complement the bold flavors of Saga cuisine while keeping sweetness restrained and rice character forward.
