Kobayashi Shuzohonten, brewing Mandai since 1792 in Umi-machi, Fukuoka, named its brand after a lucky stone resembling a tortoise found by its second-generation owner, taking inspiration from the proverb the tortoise lives ten thousand years. Using Fukuoka-grown Yamadanishiki and Yumenikkon rice with water from the Sangun mountain system, the brewery produces all sake in small batches under one metric ton of total rice, maintaining the hand-crafted quality that has defined its eight-generation family lineage.
