Founded in 1973 through the merger of four Miyagi Prefecture breweries, Ichinokura is based in Osaki, a region renowned for producing prized table rice varieties such as Sasanishiki and Hitomebore. Despite the scale of its modern facilities, the brewery maintains a strong commitment to hands-on craftsmanship, using traditional tools like cedar steamers and koji trays and running round-the-clock koji cultivation. The lineup ranges from the well-known sparkling Suzune and the light, low-alcohol Himezen to robust junmai and polished junmai daiginjo expressions.
