Hoshizakari is the flagship of Yamaboshi Shuzou, founded in 1839 in Konan, Aichi Prefecture, and built on the soft underground water of the Kiso River and the cold Ibukioroshi wind blowing down from Mount Ibuki that defines the brewing climate. The brewery developed Japan's first sake using yeast derived from wisteria blossoms harvested from the nearby Mandara-ji temple garden, producing the seasonal label Fujihana.
