Hanayoi is produced by Hanayoi Shuzo, founded in 1899 in Shobara City, Hiroshima Prefecture, in the mountain district of northern Hiroshima where water from the Chugoku range provides a mineral-rich, medium-hard brewing water. The brewery's longstanding theme is preserving what it calls the ancient and good character of traditional sake while keeping its style approachable and food-compatible. Hanayoi Shuzo is also known for being an early producer of sparkling nigori-style sake, releasing its effervescent dobu line before carbonated sake became widely available.
