Hakueisen

Shimomura Shuzoten in Himeji, Hyogo, has brewed since 1884 under the family maxim there is no technique superior to handcraft, a principle that guides their Hakueisen label as a fully hand-produced sake made exclusively with locally grown rice. The brewery produces only junmai-style sake, refusing mechanization and large-scale production in favor of small-batch work that can be monitored at every stage. Their Oku-Harima range, brewed in the same tradition, is known for its presence on the palate, robust character, and suitability for warm serving.
