Hakueisen Junmai Ginjo Natsunohojun Karakuchi Namazake uses Hyogo Yume Nishiki polished to 55%, released as a dry summer namazake from Shimomura Shuzoten in Himeji's forested mountains, Hyogo. The older Hakueisen (白影泉) label predates the 1993 Okuharima launch, and this unfiltered, unpasteurized summer expression delivers the brewery's characteristic handcrafted depth in a refreshing seasonal form.
