Hachitsuru is the oldest brand of Hachinohe Shurui, a company founded in 1786 in Hachinohe, Aomori Prefecture, whose name combines the Nanbu clan crest of two cranes with the city's name. The brewery is recognized as the birthplace of Association Yeast No. 10, a yeast widely used across Japan for ginjo-style production, and continues to brew in the Nanbu tradition using mineral-rich water drawn from 100 meters underground alongside Aomori-grown rice varieties such as Hanashibuki and Hanawomoi. This heritage of yeast development and regional terroir defines Hachitsuru's enduring identity.
