Gotensakura is brewed by Saito Sake Brewery, a Tokushima City producer that uses nearly 100% locally grown rice, including Yamadanishiki and Gin no Sato cultivars, alongside water drawn from a 30-meter well fed by the nearby Akui River. The brewery employs Tokushima's own LED Dream Yeast, which produces a pronounced fruit aroma and powerful fermentation well suited to ginjo-style brewing. Gotensakura, whose name evokes a cherry tree in full bloom within a palace courtyard, covers a range from junmai honjozo designed for warm-service enjoyment to a junmai daiginjo with delicate fruity notes and refreshing acidity.
