Denyu

Takanoi Shuzo is a sake brewery in Ojiya City, Niigata, located in the Uonuma region famed for its rice cultivation and snowmelt-fed water, and it holds the distinction of being the first brewery in Japan to experiment with snow aging, beginning those trials in 1987. The Denyu brand benefits from this pioneering yuki-jukusei method, in which sake is stored in tanks buried under five meters of snow for approximately 100 days at near-zero temperatures with 100% humidity, developing a subtly amber color and a mellow, rounded character. Rice from the Uonuma area, particularly the Koshitanrei variety, provides the clean yet full flavor base for the lineup.
