Okazaki Brewing Company is situated in Hagi, Yamaguchi, along the Abu River, close to the Chomonkyo gorge, one of the prefecture's most celebrated natural landmarks, which gives the brand its name. The brewery uses Abu River underground water and 100 percent Yamaguchi-grown sake rice, following a seasonal winter-only brewing cycle to produce layered, food-forward sake rooted in regional ingredients. Okazaki is also credited as one of the first breweries in Japan to produce a sake-based liqueur, reflecting a long-standing creative streak alongside its traditional lineup.
