Okamura Honke was founded in 1854 in Toyosato Town, Shiga Prefecture, situated between Lake Biwa and the Suzuka mountain range, whose groundwater flows through the brewery's own well and irrigates the surrounding Omi rice paddies. The brewery's Chojukinkame brand takes its name from golden turtle, a symbol of good fortune and longevity associated with the hereditary lords of the region. Sake is pressed using the traditional kibunebukuro-shibori method, a gravity-only wooden tank bag squeezing technique dating to the Edo period that takes two full days to complete.
