Ajigasawa is produced by Ozaki Shuzo, founded in 1860 and the sole remaining brewery on the western coast of Aomori Prefecture. Every step of production — from washing equipment to brewing — uses water from the Shirakami Sanchi subterranean aquifer, and the house style leans toward clean, moderately dry sake suited to the seafood of the Sea of Japan coast.
