A Matsunami Sake Brewery produz sake com o metodo Noto Mori em Matsunami, Noto-cho, na ponta da Peninsula de Noto, desde o primeiro ano da era Meiji. Apesar de ser uma adega jovem em comparacao com adegas de 200 ou 300 anos, a historia se faz sentir a cada passo. As ferramentas tradicionais de sake sao usadas com cuidado, e o metodo artesanal de preparacao em frio continua preservado. A adega usa agua de poco naturalmente pura, e produz sake de uso cotidiano ate Daiginjo de ocasioes especiais.
