Gin no Iroha, variedade de arroz para sake nascida em Miyagi, introduzida em 2020 e a primeira nova variedade de arroz para produção da prefeitura em 23 anos, é polida a 50% para este junmai ginjo da Nakayu Sake Brewery. O arroz é reconhecido por produzir uma textura arredondada e suave e uma doçura delicada, qualidades que se traduzem em um junmai ginjo macio e limpo com acidez frutada sutil.
