Description

This nama genshu version of a junmai ginjo is brewed with Koshi Tanrei, a rice variety developed over fifteen years as a hybrid of Yamada Nishiki and Gohyaku mangoku and grown exclusively in Niigata. Left unpasteurized, it carries an umami rich, slightly dry, light profile that feels more vibrant and bright than the pasteurized version of the same sake.
