A cervejaria Yakimaki foi fundada em 1862, no fim do xogunato Tokugawa. O primeiro Yatsusaki iniciou a producao de sake no sopé sul de Yatsugatake, na aldeia Kurosawa, em Kai no Kuni. Desde a fundacao, as inscricoes de sake incluem Kai Otomiyama e Ko Masamune. A ligacao com Otoyama vem do Santuario Ishimizu Hachimangu em Kyoto, antigo santuario relacionado a deuses do sake.
