Description

O arroz Tama Sakae, variedade associada à Prefeitura de Shiga, é a base deste tokusen honjozo da Uehara Shuzo, produzido com água de nascente filtrada pelas colinas acima da costa ocidental do Lago Biwa. A cervejaria, fundada em 1862, aplica a mesma técnica de prensa kioke tenbin de barrica de madeira e a filosofia de fermento próprio a este honjozo que define sua linha de junmai e ginjo.
