Nishinomon Daiginjo Namashu utiliza Yamada Nishiki polido a 40%, produzido pela cervejaria Yoshinoya em Nagano, próxima ao antigo templo Zenkoji. A cervejaria, fundada em 1637, utiliza a água das nascentes da bacia do Rio Saigawa para produzir um sake conhecido pelo elegante aroma ginjo e pelo sabor suave e refinado.
