A fermentação kimoto e pelo menos cinco anos de envelhecimento a temperatura de gelo definem este junmai daiginjo de uma kura de Saitama que se tornou a primeira cervejaria all-junmai do pós-guerra no Japão em 1987. A água dura do aquífero de Chichibu e a longa maturação produzem um sake de profundidade notável, melhor apreciado quente, entre 45 e 55 graus Celsius.
