O Yamada Nishiki cultivado em Okayama é polido a 40% para este daiginjo, resultando em um aroma frutado ao lado de um final refinado e seco com uma doçura surpreendentemente suave no paladar. A cervejaria utiliza água do aquífero do Rio Ashimori, a mesma usada historicamente pelas forças de Toyotomi Hideyoshi, e conquistou quarenta primeiros lugares consecutivos no Concurso de Jizake da Prefeitura de Okayama.
