Daiginjo Sembazuru utiliza Yamada Nishiki polido a 40%, elaborado por 40 dias de fermentação prolongada em baixa temperatura na Sato Shuzo em Taketa, Oita. Situada a 600 metros de altitude, a cervejaria se beneficia do ar fresco das montanhas e da água de nascente suave proveniente do Monte Kuju, conferindo ao sake um aroma frutado com doçura e um acabamento limpo.
