Description

It is a unique and experimental work in terms of flavors that have been commercialized from the desire to make alcohol that suits the wonderful raw ham of Tanara, which is imported by our company. This is the first attempt for sake, which has been diverted from marrotic fermented (MLF) technology that is usually used in wine. MLF is a fermentation that turns appleic acid contained in alcohol into lactic acid. This makes the taste of sake very mellow. In addition, lactic acid is a good acid ("warm acid (Onshi -san)") that feels delicious when heated, and you can enjoy a special taste again by adding a traditional drink. We basically want to carefully brew the royal road sake where you can feel the rich rice flavor, but at the same time, we want to create experimental works with playfulness.
