Description
Junmai ginjo from the INAZO label, named after the farming cooperative established in 2018 so the brewery could grow its own sake rice. Polished to 60% and brewed with mineral-rich hard water from the Tendai mountain range, it shows citrus-tinged aromas alongside firm rice umami and a clean, dry finish.
