Brewed in Ibaraki from Watari Bune, a heritage sake rice variety that was revived after falling out of use, and polished to thirty five percent, this Junmai Daiginjo is richly layered with honeydew melon, peach, and pineapple. The texture is silky and expansive, with enough brightness to stay food friendly despite its depth. It finishes long and elegant, best enjoyed slightly chilled.
