Ginjo sake is carefully finished by polishing rice rice up to 60 % and ginjo brewing by low temperature fermentation. It is finished in a neat taste. Nishibori Sake Brewery is located in the "Oku -Zashiki" in Edo and is adjacent to the Nikko Kaido. It was named from the room "Okuzashiki", which welcomes important customers. It is a clean type of Ginjo sake, which is prepared with the underground water of the Nikko Mountains and the local sake rice.
