Uzume Junmai Daiginjo Hukuroshibori from Ito Shuzou in Mie is produced using the fukuroshibori bag-pressing method, where the moromi is placed in cloth bags and sake drips out naturally without mechanical pressure. Brewed as a junmai daiginjo with rice polished to 50% or finer, it offers exceptional clarity and concentrated, elegant flavor.
