Uzen Shiraume Yamahai Junmai Ginjo is brewed by Haneda Shuzo, a brewery founded in 1592 in Tsuruoka City, Yamagata Prefecture, making it the oldest of the four breweries in the Oyama region. This yamahai-method sake uses Awa Yamadanishiki rice, delivering a rich, complex umami backbone alongside the characteristic lactic acidity typical of traditional yamahai brewing. Bottled as an unfiltered, unpasteurized nama genshu, it showcases the full natural character of the rice and slow fermentation.
