From Umetsu Shuzo's Umaigana series, this tokubetsu junmai is the Ajiwai-no-jun type, described as full-bodied with depth and a clean finish. Polished to 60% using locally sourced Tamasakae rice, it pairs well with strongly seasoned dishes and is enjoyable cold or warm.
