This unpasteurized nama sake is aged at sub zero temperatures, which draws out an intense, full bodied umami balanced by a clean, dry finish. The aroma stays mellow and subdued, but the palate shows a dense, bouncy, ricey mouthfeel with light apple and banana notes. Extended aging softens the texture, giving the finish more smoothness and nuance rather than sharp astringency.
