Shoki, named for Zhong Kui the demon-quelling deity popular in Japanese folklore, is a tokubetsu honjozo using rice polished to 60% or below, a stricter standard than regular honjozo. Produced in Ishikawa with the region's characteristic attention to balance, it offers a clean, slightly dry profile with refined grain character.
