Free of additives and filtration, and made with pesticide free rice, this junmai follows the traditional kimoto method and is bottled namagenshu, meaning unpasteurized and undiluted. The palate is bright and juicy, layered with ripe plum, toffee like sweetness, brown rice syrup and a savory hint of mushroom and ginger, all lifted by mouthwatering acidity.
