Tenjotaifu Junmai Daiginjo from Ikenishiki Shuzo in Fujieda, Shizuoka, takes its name from the phrase meaning great wind above the heavens, suggesting a sake of grandeur and elevated character. As a junmai daiginjo, the rice is polished to 50% or below, removing the outer layers and concentrating the starchy core to produce an exceptionally clean, aromatic sake without the use of added alcohol.
