An autumn release tokubetsu junmai from the Tadatada line, labeled Daidai (orange), from this Shiga brewery whose toji trained under the celebrated Noto master Naohiko Noguchi. Aged and fire-entered before autumn shipment, it carries the mellowed, settled character the brewery achieves through its extended maturation policy.
