Kametaya Shuzoten in Matsumoto, Nagano, founded in 1869, produces the Syuuhou Alps Masamune line using Alpine groundwater and primarily Nagano-grown sake rice. The brewery draws water from 62 meters underground at 15 degrees Celsius, which serves as the foundation for all expressions in this range.
