Shinkuro Junmai Ginjo is brewed by Hamachi Shuzo, a Fukuoka brewery established in 1870 whose founder Shinkuro Hamachi was an ardent patron of Noh performance. The brand honors that founder, and the junmai ginjo classification confirms no added distilled alcohol, with sake rice polished to at least 60%. Itoshima-grown Yamada Nishiki and subterranean water from Mount Raizan contribute a clean, fruit-forward ginjo character rooted in the local terroir of northern Kyushu.
