A nakakumi (middle-cut) junmai daiginjo nama-nama from this Chikugo brewery, made by collecting sake from the unpressurized and middle stages of bag pressing. The result is particularly clean, with excellent aroma, full rice umami, and the vivid freshness of the double-unpasteurized format.
