Daiginjo from this Fukuoka kura established in 1717, made from Yamada Nishiki polished to 40% and drawn only by gravity through the shizuku (drip) method without pressing. The unpressurized extraction yields a particularly delicate, pure sake with the full expression of Itoshima Yamada Nishiki, offering elegant ginjo fragrance and deep rice umami alongside the refinement of daiginjo polish.
