Shigemasu Chokarakuchi Tokubetsuhonjozo is an extra-dry tokubetsu honjozo polished to 55% from Takahashi Shoten in Fukuoka's Yame City. The chokarakuchi (extra dry) profile is achieved through complete fermentation using Kumamoto yeast in the brewery's 300-year-old handmade-koji tradition.
