A junmai ginjo brewed with Yamada Nishiki milled to 50%, aged for approximately two years at ambient temperature before release. The extended aging produces a soft mouthfeel with dried-fruit and light nut aromas, and a deep, rounded umami. Sake meter value is +7 and acidity is 1.8, expressing a dry, matured character best at room temperature or warm.
