Ginpuu rice milled to 50% and fermented with soft Nasu mountain spring water defines this ginjo from Senkoma Shuzo in Fukushima Prefecture. The result is a sake with refined, delicate fragrance and the full rice flavor characteristic of locally grown Hokkaido sake rice at the ginjo polish level.
