Yamada Nishiki polished to 40% forms the basis of this daiginjo, brewed using the brewery's own house yeast and selected strains including 1401, with extended low-temperature fermentation begun around the coldest point of winter. Delicate and fruity in aroma, it exhibits a subtle sweetness within a refined, smooth character typical of Kanto daiginjo.
