Yamada Nishiki milled to 40% is slowly dripped through cloth (tobinkakoi shizuku method) in this Sakuragawa Daiginjo that earned gold at the National New Sake Appraisal Competition. The shizuku extraction preserves the delicate aromatic compounds of the premium-grade mash.
