Junmai daiginjo made from Yamada Nishiki polished to 40%, fermented over more than a month using extended low-temperature methods and bottled as an undiluted genshu. The 2021 National New Sake Competition gold medal winner shows pear and apple fruit aromatics with a delicate, smooth finish.
