Description
Sakejikomi Jojo (้ธ้ธ) from Umetsu Shuzo is a kijoshu, brewed using sake in place of a portion of the water during fermentation, which yields a deeply amber, viscous sake with a rich, complex sweetness and a long finish. Best sipped slowly and served either chilled or at elevated warm temperatures, it is one of the brewery's more unconventional offerings.

The heart of the sake brewing, which has been handed down since its foundation, is a stubborn commitment unique to a small warehouse, with all the journey and effort. From the preparation in 2005, all sake was changed to rice and rice koji only.
With the pride as a crowned sake, and being involved in local agriculture in the future, the desire to "aim for a powerful pure rice sake brewing" is deepening.
