Sadaijin Shiboritate Namazake is a freshly pressed, unpasteurized sake from Ootone Shuzo, based in Numata, Gunma, near the foot of the Oze plateau. Shiboritate namazake releases are bottled immediately after pressing without any heat treatment, capturing the vivid, unfiltered character of the new brew.
