Nisennananen Jozo Jukusei Junmaishu, meaning 2007 vintage aged junmai sake, from Kita Shuzo in Shiga is a pure-rice sake brewed in 2007 and aged for an extended period, allowing the full-bodied junmai foundation to develop the richness, amber hue, and layered complexity that long-term koshu maturation produces. The junmai base, free of added alcohol, provides a robust flavor foundation that withstands and benefits from extended aging more resilient than lighter alcohol-added styles. This rare vintage-dated expression from the Kirakucho brewery represents a patient, artisanal approach to sake maturation from Shiga's Lake Biwa brewing tradition.
